3-Ingredient No Bake Cottage Cheese Brownie (Easy & Fudgy!)

A rich, fudgy brownie made with cottage cheese, oats or almond flour, and melted chocolate—no eggs, no oven needed!

Ingredients
  

  • 1 cup full-fat cottage cheese blended until smooth
  • 1 1/4 cups dark chocolate chips or chopped chocolate
  • 1/2 cup quick oats or almond flour

Method
 

  1. Melt chocolate in microwave or double boiler until smooth.
  2. Blend cottage cheese until creamy.
  3. Mix melted chocolate, blended cottage cheese, and oats in a bowl.
  4. Press mixture into parchment-lined 8x8 pan.
  5. Chill for 2–3 hours until firm, then slice and serve.
