Ingredients
  

  • 2 cups vanilla ice cream softened
  • 2 cups strawberry ice cream softened
  • 1/4 cup berry jam or coulis
  • 1 1/2 cups crushed cookies Oreos or graham
  • 4 tbsp melted butter
  • 1 cup whipped topping
  • 1/2 cup mini marshmallows
  • 2 candy eyes
  • Fondant or edible decorations optional

Method
 

  1. Mix crushed cookies with melted butter and press into the base of a springform pan. Freeze 10 minutes.
  2. Spread strawberry ice cream evenly over the crust. Freeze for 15 minutes.
  3. Swirl in berry jam for a fruity layer. Freeze again for 10 minutes.
  4. Add vanilla ice cream as the top layer. Smooth out and freeze for 30 minutes.
  5. Pipe whipped topping to form Labubu ears and cheeks.
  6. Add marshmallows and candy eyes. Use fondant or toy topper for the face.
  7. Freeze for at least 1 hour before serving. Slice with a warm knife.
