- Pulse walnuts and almonds in a food processor until coarsely ground.
- Add dates and pulse again until sticky.
- Blend in maple syrup and sea salt. Press into springform pan and freeze.
- Blend cottage cheese, cashews, milk, maple syrup, lemon juice, vanilla, and salt until smooth.
- Pour filling over crust and smooth the top.
- Freeze for at least 4 hours or overnight.
- Thaw for 10 minutes before slicing. Add toppings and serve.
