Ingredients
  

  • 1/2 cup full-fat cottage cheese
  • 1/4 cup sugar-free maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla protein powder
  • 1 cup almond flour
  • 1/3 cup dark chocolate chips divided

Method
 

  1. Blend cottage cheese until smooth.
  2. Mix in protein powder, syrup, vanilla, and almond flour.
  3. Fold in most of the chocolate chips.
  4. Chill dough in fridge for 30 minutes.
  5. Scoop and roll into balls.
  6. Freeze for 20 minutes.
  7. Melt remaining chips and dip balls.
  8. Chill until chocolate sets.
