Method
- In a saucepan over low heat, melt the peanut butter and honey until smooth.
- Remove from heat and stir in oats, vanilla, and salt.
- Press the mixture into a parchment-lined 8x8 inch pan.
- Melt chocolate chips and spread over top (if using).
- Chill in fridge for 2 hours or until firm.
- Cut into bars and enjoy.
