Ingredients
  

  • 2 cups quick oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 cup chocolate chips optional

Method
 

  1. In a saucepan over low heat, melt the peanut butter and honey until smooth.
  2. Remove from heat and stir in oats, vanilla, and salt.
  3. Press the mixture into a parchment-lined 8x8 inch pan.
  4. Melt chocolate chips and spread over top (if using).
  5. Chill in fridge for 2 hours or until firm.
  6. Cut into bars and enjoy.
