Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1 block 8 oz full-fat cream cheese, softened
  • 1/3 cup powdered erythritol or monk fruit
  • 1/2 cup heavy cream
  • tsp vanilla extract or lemon/lime/coffee variations
  • Optional: zest or juice of 1 lemon or lime
  • Optional crust: 1 cup almond flour 2 tbsp butter, 1 tbsp sweetener

Method
 

  1. Blend cottage cheese in a food processor until smooth.
  2. Add softened cream cheese and sweetener. Blend until creamy.
  3. Add heavy cream and extract. Blend again until thick.
  4. Spoon into a springform or lined pan. Smooth the top.
  5. Chill for 4+ hours or overnight before slicing and serving.
